I just got my hair done and I guess I'm just looking for something to talk about lol Anyway the number of characters with red or reddish hair kind of surprises me since it's like two percent of the population. The Pikes, Charlotte, and Mrs. Barrett are described as having chestnut hair, which is brown with a slight red tint. The Rodowsky's have this bright orange hair. Nancy from the LS series has what I guess is a light auburn color. Is there any I missed? Characters with some other hair colors that were interesting?

Considering how many characters exist in the BSC universe, I don't find it at all odd that a few of the characters have red hair. As you said, chestnut hair is brown with a slight red tint, so I think of people with chestnut-coloured hair as brunettes, not redheads. (Although Mal is originally described that way as well, pretty soon she's retconned to be the only redhead in the family.) I just took a look at Hello, Mallory, and she says that her whole family has "dark brown" hair but that her mother calls it chestnut brown to make it sound less ordinary.
You missed the Hobarts. The Hobart boys are originally described as having "reddish-blond" hair, but at least Ben is specifically referred to as a redhead after that, and maybe his younger brothers are, too; I don't remember. I don't think there's an unusual number of redheads in Stoneybrook, but I do think it's weird that the frequent BSC clients include both a family with three red-haired boys (the Rodowskys) and a family with four red-haired boys (the Hobarts).
There are probably a bunch of really minor characters with red hair that I can't think of because they weren't mentioned often. For instance, Claudia's seventh-grade friend Shira Epstein has curly red hair, but the only reason that occurred to me is because I just reread Claudia, Queen of the Seventh Grade.
I'm a natural redhead. In November I attended a women's running summit with about 40 participants. One of the icebreaker activities was to organize ourselves in groups by hair colour. There was a big group of brunettes, smaller groups of women with blonde and black hair, and two or three of the older women there were in a group for grey hair. I was the entire redhead "group."

I think Dawn’s stepmom Carol has red hair? In the Friends Forever books Kristy gets a stepmother who has an interesting description of her hair complete with 90s highlights

I recently read a description of the DeWitt family in Stacey and the Fashion Victim, and it said that all of the kids looked kind of like Franklin DeWitt, who was tall and thin with auburn hair. So maybe not an odd amount of redheads in general, but an unusual number of families where all the kids have red hair. Although I have red hair, my parents both have brown hair and my brother is blond.
I also just remembered another BSC client with red hair -- Rosie Wilder.

I love the thick black-brown dark hair that Mary Anne, the Stevenson twins and so many others in Stoneybrook had.
I guess it's because it's the color of my own hair, which reminds me of root beer or dark chocolate.
In most of the large group events I attend, most of the people have black or dark brown hair.

In the graphic novels claudia has a pink streak in her hair, I thought that looked cool.

And today in NYC as a high school counselor, Mary Anne knows people of all hair colors and some in every tattoo color.

It wouldn't necessarily be rebellion, but I can see Mary Anne putting deep purple or deep blue highlights in her hair in addition to slowly adopting the bohemian casual appearance in high school. I can completely see Dawn dying her hair ocean blue or magenta in high school. I can see Stacey sometimes putting lavender or magenta streaks in her honey-colored hair. I can actually see Kristy dying half of her hair deep pine green or dark blue in addition to deepening her grunge look with ripped jeans and ragged, paint-stained sweats and/or spatter-stained T-shirts in high school. And I wouldn't be surprised to see Abby sometimes dye her thick dark curls purple or deep blue. In my high school days, at least a third of my classmates dyed their hair a myriad of rainbow colors and today my seventeen-year-old niece has deep blue and green hair, so hair-dying among teens in my area is not unusual.
