I have yet to meet a celebrity of any kind, so I'm kinda jealous that the BSC has had so many encounters. I've counted:
Derrick Masters, child TV star Henrietta Hayes, famous author Mr. Brooks, author Bill Bain, Matt Ademec, Gloria Kemp, former pro baseball players some child movie actress that Karen befriended in Karen's Movie Star (forgot her name) Karen's bad swim coach was an Olympic athlete Someone may or may not have spotted Spider from Spider and the Insects on their cruise ship

Martha Kempner, author - Fright Night. Turned out to be...not such a nice lady. Ted Garber, author - Live from WSTO. Claudia and Ashley invited him to speak on their program. Jack Brewster, baseball player - Mind Your Own Business, Kristy. He's Sarah Green's uncle or something. Gary Rockman, actor - Mystery of Stoneybrook. I think Stacey spots him getting into a cab.

So, mostly authors and baseball players? That's an odd combination.
Was Claudia and Mallory's art teacher in New York, New York famous? I feel like Claudia and/or Jessi must have been taught by famous artists/dancers at some point.

Karen met the president of the United States in a LS book I prefer to pretend never happened. Oooh, this sounds exciting. How did this happen? These probably don't count as a real celebrities, but Karen and Andrew also met Minnie, Snow White, Pluto, and Tigger at Disney World.

^I think she did and IIRC Minnie signed the paper (in all caps) "Love Minnie Mouse" to both Karen and Andrew. I don't remember if Minnie even wrote "To Andrew" or "To Karen."

I think it would be way too hard for those people to personalize their autographs to kids, especially with the crazy names/spellings parents give their kids these days!

^ when i was a kid, my mom always told me to tell the characters my name when i gave them my autograph book, so they could personalize it. but my name is heather and there is only one way to spell that :]
